Shrimp or Prawn Cedar Wrappetizers

This is a BC Coastal Original Recipe!

INGREDIENTS:

(Makes 12)

  • 4 cedar wraps
  • 12 – 8″ cotton butchers’ twine, green onion stems or strips of dried corn husk
  • 24 uncooked prawns with shell removed down to the tail
  • 1 tbsp BC Coastal Seafood Rub
  • 2 tbsp olive oil
  • Soak cedar wraps and cotton twine or husk strips in water for 15-30 minutes (Until pliable)
  • Mix BC Coastal Seafood Rub with olive oil in a bowl and toss prawns to coat.
  • Carefully cut each cedar wrap into 3 strips (Be careful to cut across the grain so you can still roll them up)
  • Place 2 prawns with a tail pointing out of each end at the bottom of the wrap strip and roll up, securing it with a string.
  • Follow cooking instructions below for oven or barbeque use (Cooking time varies depending on size of prawn)
  • Arrange on plate and serve.

INSTRUCTIONS:

  1. Submerge cedar wraps in water for 15-30 minutes or until pliable
  2. Preheat your grill or oven to 400 F (200 C)
  3. Place food on bottom third of wrap and roll up, securing with presoaked cotton string, green onion stem or strips of corn husk.
  4. Grilling: Place filled wraps on the grill, turn heat down to low and close lid. Cook for 2-3 minutes, turn and cook again 2-3 minutes.
  5. Oven: Place filled wraps on baking sheet on center rack in oven. Cook 2-3 minutes, turn and cook again 2-3 minutes.
  6. Serve wraps on plates to display your beautiful West Coast seafood!
